Description

1. How it is grown and harvested: Central Asia is one of the original homelands of the pistachio, and wild pistachio woodlands still grow on the dry hills of the region. The trees need very hot, dry summers and cold winters, which is exactly the climate of the region’s foothills. These kernels come from pistachios grown in the hot, dry regions of Central Asia. After harvest in late summer, the nuts are hulled, dried and shelled, and the green kernels are separated from the shells. The natural green colour of the kernel is an important quality sign, and the most vivid kernels are reserved for premium uses. Pistachio trees are very drought-resistant and grow on dry, stony slopes where few other crops can survive, producing small but intensely flavoured nuts. Shelling is done carefully to keep as many whole kernels as possible.

2. Processing and packaging details: The kernels are sorted by size and colour, cleaned and inspected to remove shell fragments, damaged kernels and foreign matter. They are packed in food-grade, moisture-resistant packaging inside export cartons and should be stored cool and dry. Whole kernels and pieces can be supplied separately according to customer needs. Store pistachios in a cool, dry place away from light and strong odours, in closed packaging. In-shell pistachios keep their quality for around 12 months; kernels are best stored cool and used within 12 months. Each lot can be supplied with export documentation, including a phytosanitary certificate and certificate of origin, on request.

3. Health benefits and nutrition: Pistachio kernels provide plant protein, fibre, healthy fats, potassium, vitamin B6, and lutein and zeaxanthin. Pistachios are a tree-nut allergen. Their green colour comes from natural pigments, including chlorophyll and lutein, which have antioxidant properties. Pistachio kernels are a premium ingredient for confectionery, ice cream and gelato, baklava and oriental sweets, chocolate, bakery, pistachio paste, sauces and salads. They are also excellent as a snack, in granola, as a topping for yoghurt and desserts, and in savoury dishes with rice and meat. Even a small amount of chopped pistachios gives dishes a beautiful green colour.
