Description

1. How it is grown and harvested: Central Asia’s dry, sunny climate has made drying the natural way to preserve fruit and berries for the winter for centuries. Low humidity and steady sunshine allow fruit to dry evenly and keep well, and many of these traditional products are still made using methods passed down through generations of farming families. Barberry (zirk) is a thorny shrub that grows in the mountain areas of Central Asia. Its small, bright red berries ripen in autumn and are picked by hand, then dried naturally in the shade or sun. Drying preserves their vivid colour and their sharp, pleasantly sour flavour. Barberry grows wild in the mountains and is also planted in gardens and hedges. The bushes are thorny, so harvesting the small berries by hand takes time and skill, which makes barberry a valued spice. The berries are picked when they reach full colour and dried carefully to keep their bright red appearance and sharp, fruity acidity.

2. Processing and packaging details: The dried barberries are cleaned of stems, leaves and debris, sorted to remove dark or damaged berries and foreign matter, and packed in food-grade liners inside export cartons that protect their colour and aroma. Store in a cool, dry, well-ventilated place away from direct sunlight and strong odours, in closed packaging. Under proper conditions the product keeps its quality for 12 months or more. Each lot can be supplied with export documentation, including a phytosanitary certificate and certificate of origin, on request.

3. Health benefits and nutrition: Barberries contain natural fruit acids, vitamin C and antioxidant compounds. Used as a seasoning, they add flavour without fat or salt and are traditionally believed to aid digestion of rich dishes. Barberry is an indispensable seasoning for Uzbek plov and is widely used in Persian rice dishes, meat dishes, stews, salads and sauces. It is also used in teas and infusions and is a popular item for spice shops and oriental food retail. Just a handful added to plov gives the characteristic gentle tartness and bright red accents.
