Description

1. How it is grown and harvested: Devzira is a traditional rice variety from the Fergana Valley and is considered by many cooks the best rice for Uzbek plov. It is grown in irrigated paddies with mountain water, harvested in autumn and dried. Devzira grains are reddish-pink with a characteristic stripe and are firm and heavy. Devzira has been grown in the Fergana Valley for centuries, and its unique character is linked to the valley’s soils, climate and water. Its grains become larger after cooking and stay separate, absorbing the flavours of meat, carrots, onions and spices.

2. Processing and packaging details: The rice is hulled, lightly milled to keep its characteristic colour, cleaned and sorted to remove broken grains and foreign matter, then packed in 0.9 kg packs. Packaging protects the rice from moisture and dust during storage and transport. Each lot is checked for moisture, grain size and the share of broken grains before packing. Devzira is a premium rice and is often offered in gift packs for special occasions. Store in a dry, cool place in closed packaging, away from moisture and strong odours. Under these conditions rice keeps its quality for 12–18 months.

3. Health benefits and nutrition: Devzira rice is naturally gluten-free and provides carbohydrates for energy along with some protein, fibre, B vitamins and minerals; its lighter milling keeps part of the outer layer of the grain. Many cooks prefer Devzira for its heavy, firm grains and rich taste, which make plov fuller and more flavourful. It is easy to digest and suitable for all ages. Devzira absorbs fat, broth and spices very well while keeping its shape, making it ideal for festive Uzbek plov. Rinse and soak before cooking. Devzira is also good for stuffed vegetables and festive rice dishes.
