Apricot Kernels “In shell”
Description
1. How it is grown and harvested: Because Uzbekistan is one of the world’s largest apricot producers, the country has a large and steady supply of apricot stones every season, collected during the pitting of fruit for drying. Apricot kernels are the seeds found inside the stones of apricots. Uzbekistan is one of the world’s major apricot producers, and the stones are collected when apricots are pitted for drying. The stones are cleaned and dried naturally in the sun. Using the stones is part of making full use of the apricot crop, so nothing from the harvest is wasted. The stones come from apricots grown in the Fergana Valley, Samarkand and other regions, and they are collected during the summer drying season, when the fruit is pitted by hand or by machine. After collection, the stones are spread out in the sun to dry thoroughly, which helps them store well and makes later cracking easier.
2. Processing and packaging details: The stones are cleaned of fruit residue and dust, dried, sorted and inspected to remove damaged stones and foreign material, then packed in export bags. The shell protects the kernel inside, so the stones store well for long periods in dry conditions. Each lot is checked for moisture, cleanliness and the share of damaged stones before packing. Store in a cool, dry place away from light and strong odours. In-shell stones keep their quality for long periods; kernels are best used within 12 months. Buyers are responsible for ensuring that the product and its intended use comply with the food safety rules of the destination country. Export documentation is available on request.
3. Health benefits and nutrition: Apricot kernels contain oils, plant protein and minerals. Please note: apricot kernels, especially bitter ones, naturally contain amygdalin, which can release cyanide in the body. Raw apricot kernels must not be eaten in large quantities, and buyers must follow the food safety rules of the destination country. Apricot kernels have a long tradition in Central Asian cuisine and are mostly eaten roasted and salted in small quantities. Apricot stones in shell are supplied mainly to processors for cracking and kernel production, for oil pressing, and for traditional roasted snacks prepared according to local food safety rules.
