Almonds “Peeled”
Description
1. How it is grown and harvested: Almonds have been cultivated in Central Asia since ancient times, and wild almond species still grow on the region’s mountain slopes. Long, hot, dry summers, mild winters and well-drained stony soils are ideal for almond trees, and they give the nuts a sweet, concentrated flavour. Peeled almonds are made from almond kernels grown in Uzbekistan. The kernels are briefly blanched in hot water to loosen the skins, which are then removed, revealing the smooth, creamy-white almond inside. The kernels are dried again to the right moisture level. The almonds themselves come from the orchards of Uzbekistan’s foothills and the Fergana Valley, where hot, dry summers and well-drained soils produce sweet, well-filled kernels. Blanching is done quickly so that the kernels are not cooked, keeping their natural crunch and sweet flavour.
2. Processing and packaging details: The peeled almonds are sorted and inspected to remove kernels with remaining skin, broken pieces and foreign matter. They are packed in food-grade, moisture-resistant packaging inside export cartons. This product is available in limited volumes. Store almonds in a cool, dry place (ideally below 15 °C), away from light and strong odours. In-shell almonds keep their quality for up to 12–18 months; kernels for around 12 months in closed packaging. Each lot can be supplied with export documentation, including a phytosanitary certificate and certificate of origin, on request.
3. Health benefits and nutrition: Peeled almonds provide vitamin E, magnesium, calcium, plant protein and healthy fats, with a mild flavour and smooth texture that many people find easier to digest. Contains tree nuts. Without their skin, almonds have a softer, sweeter taste and a lighter colour, which is especially valued in confectionery. They are naturally gluten-free, making them an important ingredient for gluten-free baking in the form of almond flour. Peeled almonds are ideal for marzipan, almond flour, macarons, fine pastries, confectionery, sauces, almond milk and decoration of desserts. Sliced and slivered peeled almonds also give a neat, professional look to cakes, pastries and desserts.
